Cooking chevon
The lack of fat in goat meat means it needs a low temperature and moisture, such as a marinade, to keep it from drying out or becoming tough during cooking. The best ways to cook chevon are roasting (in the oven, in a smoker, or on the grill) or braising (cooking with added liquid such as water, wine, or milk). Chevon is a good option for recipes that call for stewed, baked or grilled meat as well as ground and used in sausage, chili and other prepared foods.
